Ingredients
- Bananas: 3 to 4 medium (very ripe/spotted are best)
- Flour: 250g (all-purpose)
- Sugar: 100g to 150g (depending on how sweet your bananas are)
- Butter: 100g (melted and cooled)
- Eggs: 3 large
- Baking Powder: 1 sachet (approx. 11g)
- Vanilla Sugar or Extract: 1 tsp
- Cinnamon or Nutmeg: ½ tsp (optional, for extra warmth)
- Salt: A small pinch
Instructions
- Prep the Bananas: Peel the bananas and place them in a bowl. Mash them thoroughly with a fork until they form a smooth puree.
- Mix the Wet Ingredients: In a large mixing bowl, beat the eggs and sugar together until the mixture becomes slightly pale and frothy. Stir in the melted butter and the mashed bananas. Add the vanilla.
- Incorporate the Dry Ingredients: Sift in the flour, baking powder, salt, and spices (cinnamon or nutmeg). Fold everything together gently with a spatula or whisk. Do not overmix, or the cake will be tough; just mix until the flour disappears.
- Bake:
- Grease and flour a cake tin (loaf pan or round pan).
- Pour the batter into the tin.
- Bake in a preheated oven at 180°C (350°F) for about 40–50 minutes.
- The Test: Insert a toothpick or knife into the center; if it comes out clean, the cake is done.
- Cooling: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
