Akara

🧆 Recipe for Akara (Cowpea Fritters)

Ingredients

  • Beans: 500 g of cowpea beans (crow beans).
  • Aromatics: 1 small onion (finely chopped or mixed).
  • Seasoning: 1 teaspoon of salt (adjust to taste) and a pinch of black pepper.
  • Yeast (Optional): A very small pinch of baking soda (some prefer to do without it and rely on elbow grease to incorporate the air).
  • Oil: Vegetable oil for frying.
  • The Sauce (Kaani): Onions, tomato paste, fresh pepper, garlic and a little vinegar.

Instructions

1. Prepare the beans:

  • Soak the cowpea in plenty of water for at least 2 hours (or overnight).
  • Peeling: Rub the soaked beans between your palms or use the short-pressure technique in a blender to loosen the skins. Rinse several times, letting the skins float to the surface to remove them, until the beans are white and clean.

2. Make the dough:

  • Blend the peeled beans with as little water as possible. You should get a thick, smooth paste, not a runny soup.
  • Add the chopped onion while mixing.

3. Aerate the dough (The secret step):

  • Transfer the dough to a large bowl. Using a wooden spoon or whisk, beat the batter vigorously for 5 to 10 minutes.
  • This incorporates air, making the Akara light and fluffy. The batter should appear slightly paler and have a “fluffy” texture. Add the salt at this time.

4. Frying:

  • Heat the oil in a deep skillet over medium-high heat.
  • Using a tablespoon, scoop out a small amount of dough and gently drop it into the hot oil.
  • Fry until nicely browned on all sides (about 3-5 minutes). They should float and swell beautifully.

5. Prepare the chili sauce:

  • Brown the sliced onions and garlic. Add a tablespoon of tomato paste and the crushed peppers.
  • Cook until the sauce is thick and flavorful.

6. Service:

  • Akara are eaten hot. In Senegal, they are often slipped into a piece of fresh baguette with the chili sauce for a classic “Akara Sandwich”.

Sala's tip: If your dough is too liquid, the Akara will absorb too much oil and become heavy. Always start with very little water when mixing; you can always add more later, but you won't be able to take any away!
