Ingredients
- Flour: 250 g
- Butter: 100 g
- Water: 400ml
- Eggs: 4 to 5 large eggs
- Sugar: For the dough and for sprinkling (icing sugar)
- Vanilla sugar: 1 sachet
- Salt: 1/2 teaspoon
- Frying oil:
Instructions
- Boil the base: In a saucepan, mix the water, butter, salt and vanilla sugar. Bring the mixture to a boil until the butter is completely melted.
- Add the flour: Remove the pan from the heat (or lower the heat) and add all the flour at once. Stir vigorously with a wooden spoon until a smooth ball of dough forms and pulls away from the sides of the pan.
- Dry the dough: Continue to stir the dough over low heat for 1 to 2 minutes to “dry it out.”
- Add the eggs: Transfer the dough to a bowl. Add the eggs one at a time, mixing thoroughly after each addition. The dough should become smooth, shiny and supple. This step requires a little arm strength!
- Frying: * Heat your oil in a deep frying pan or deep fryer.
- Use a piping bag or two spoons to drop small balls of dough into the hot oil.
- Note: The donuts will expand considerably, so be careful not to overcrowd the pan.
- Drain: Once they are golden brown and have doubled in volume, remove them and place them on absorbent paper to remove excess oil.
- Finish: Generously sprinkle warm donuts with icing sugar or dip them in granulated sugar before serving.
