Potato chips

Discover the recipe for real homemade potato chips by Feemu Fii Ak Feneen: ultra crispy, golden to perfection and much tastier than store-bought ones. A timeless classic for an aperitif or a snack!

Ingredients

  • Potatoes: 4 to 5 large potatoes (firm-fleshed or special frying variety)
  • Frying oil: Sufficient quantity (sunflower or peanut oil)
  • Fine salt: To taste
  • Spices of your choice: Paprika, chili powder, garlic powder or herbs de Provence (optional)
  • Ice water and white vinegar: For soaking

Instructions

1. Fine cutting: Wash and peel the potatoes. Using a mandolin or a sharp knife, slice them into very thin, even strips (around 1 to 1.5 mm thick).

2. Ice water bath: Immediately immerse the strips in a large bowl of very cold water with a few ice cubes and a tablespoon of white vinegar. Let sit for 20 to 30 minutes. This essential step removes excess starch to ensure perfect crispiness.

3. Thorough drying: Drain the potato slices then dry them carefully between two clean tea towels or on absorbent paper. There should not be a drop of water left.

4. Frying: Heat the oil in a large skillet or deep fryer over medium-high heat (around 175°C – 180°C). Immerse the strips in small quantities to prevent them from sticking together. Stir gently with a slotted spoon.

5. Golden cooking: Leave to fry for 3 to 4 minutes until the chips are golden brown and crispy.

6. Seasoning: Remove them with a slotted spoon, drain them on absorbent paper and salt them immediately while they are still hot, adding the spices of your choice. Leave to cool for a few moments before eating.
