Ingredients
- Pineapple: 1 large, ripe pineapple (peeled and cut into pieces).
- Cucumber: 2 large cucumbers (washed; you can leave some skin on for color or peel them completely for a milder taste).
- Fresh mint: A small handful of leaves (for added freshness).
- Ginger: A small piece (about 2-3 cm), peeled (provides a pleasant spicy touch).
- Sugar: Depending on your taste (you can also use honey or leave it natural if the pineapple is very sweet).
- Water: 1 to 1.5 liters (depending on the desired concentration).
- Lime: The juice of a lime (optional, to balance the sugar).
Instructions
- Prepare the fruit: Cut the pineapple and cucumbers into small pieces suitable for your blender.
- Mix: Put the pineapple pieces, cucumber, ginger and mint leaves in the blender. Add half the water to make mixing easier.
- Liquefy: Blend on high speed until the mixture is perfectly smooth.
- Filter: Pour the mixture through a fine sieve or vegetable milk bag into a large carafe. Press the pulp with a spoon to extract as much juice as possible.
- Dilute and sweeten: Add the rest of the water to the carafe. Add your sugar (or honey) and lime juice. Mix well until the sugar is completely dissolved.
- Cool: This juice is much better served iced. Place it in the refrigerator for at least 2 hours or serve immediately with plenty of ice cubes.
- Garnish: Serve in tall glasses with a slice of cucumber or a sprig of mint on the rim.
