Recipe for Homemade Sweetened Condensed Milk
Ingredients
- Whole milk: 500 ml (or 2 cups).
- Sugar: 150g to 200g (granulated white sugar works best).
- Vanilla sugar: 1 sachet (optional, for a nice aroma).
- Baking soda: 1 tiny pinch (this stops the milk from curdling and helps achieve that creamy color).
Instructions
1. Mix the ingredients:
- In a heavy-bottomed saucepan, pour the milk and add the sugar (and vanilla sugar if you are using it).
- Mix well while the milk is still cold to begin to dissolve the sugar.
2. The simmering process:
- Place the pan on medium-low heat. Bring to a very slight simmer.
- Add the small pinch of baking soda and stir.
3. Reduction (the patience phase):
- Let the mixture simmer for approximately 30 to 45 minutes.
- Crucial: Stir occasionally at first, but stir more frequently as it thickens to prevent the bottom from burning.
- The milk will slowly change from a bright white to a pale cream/yellow color, and the volume will reduce by about half.
4. Check the consistency:
- The milk is ready when it generously coats the back of a spoon.
- Note: Don't overcook it until it's very thick in the pan! It will thicken considerably as it cools.
5. Cooling and preservation:
- Pour the hot liquid into a clean glass jar.
- Let it cool completely to room temperature before closing the jar.
- Keep it at refrigerator. It will stay fresh for 2 weeks.
