Ingredients
- 600g Flour
- 100g soft butter
- 2 Large eggs
- 150ml Water
- 1 sachet (about 11g) Baking powder
- 2 tbsp. tbsp Sugar
- ½ tsp. coffee Salt
Instructions
- Mix the dry ingredients: In a large bowl, combine the flour, baking powder, sugar and salt.
- Add the fats and proteins: Make a well in the center and add the soft butter and eggs.
- Incorporate the water: Pour in the water gradually while mixing by hand.
- Knead: Transfer the dough to a flat surface or kneading mat. Knead vigorously for several minutes until the dough is smooth, elastic and no longer sticks to your hands.
- Rest: Return the dough to the bowl, cover it with plastic wrap or a clean cloth, and let it rest for about 45 minutes to 1 hour. This allows the gluten to relax, which will make the dough easier to roll out.
- Shape: Roll out the dough thinly, cut out circles using a glass or a cookie cutter, garnish with the stuffing of your choice (meat, fish or cheese) and fold into half-moons.
- Fry: Fry in hot oil until the fatayas are golden brown on both sides.
