Ingredients
- Fresh mint leaves: A large bouquet, carefully washed.
- Sugar: 1 kg.
- Water: 1.5 liters.
- Mint flavor/extract: A few drops (to intensify the taste).
- Green food coloring: Optional, to achieve that classic vibrant look.
Instructions
- Infuse the mint: Place the washed mint leaves in a large bowl. Pour hot water over it and let it steep to extract the flavors.
- Filter: Strain the mixture through a fine strainer into a saucepan, discarding the leaves so that only the infused water remains.
- Boil with the sugar: Add the kilo of sugar to the mint water. Bring to a boil.
- Reduce: Let simmer until the liquid reduces by about half. It should reach a thick, syrupy consistency.
- Flavor and color: Add a few drops of mint extract and the green food coloring.
- Cool: Let the syrup cool completely. For a better texture, place it in the refrigerator before using it.
