- Sugar
- Salt (a pinch)
- Baking powder
Wet ingredients:
- Eggs
- Orange juice (freshly squeezed)
- Orange zest
- Melted butter
Frying and coating:
- Frying oil
- Orange syrup: A mixture of orange juice and sugar reduced to the consistency of a syrup
- Extra grated coconut for coating
Instructions
- Prepare the orange zest: Grate the zest of the oranges to use in the dough for maximum flavor.
- Mix the dry ingredients: In a large bowl, combine the flour, sugar, shredded coconut, salt and baking powder.
- Add the wet ingredients: Add the eggs, melted butter and orange zest. Gradually add the freshly squeezed orange juice while mixing.
- Form the dough: Work the mixture until you obtain a smooth paste, slightly thick and easy to scoop out with a spoon.
- Frying:
- Heat the oil in a deep saucepan or frying pan.
- Use a spoon or your hands to form small balls of dough and gently drop them into the hot oil.
- Fry until golden brown on all sides.
- Drain: Remove the donuts and place them on absorbent paper to remove excess oil.
- Syrup glaze: Make a quick syrup by heating orange juice and sugar until thickened. Dip the warm donuts in the orange syrup to infuse them with sugar and an intense citrus flavor.
- Final coating: Immediately after dipping in the syrup, roll the fritters in additional shredded coconut for a nice finish and more texture.
- Serve: These donuts are best served warm or at room temperature, as a delicious snack or dessert
