Bubble fruit or fruit tapioca

Ingredients

  • Large tapioca pearls: Use large, colorful tapioca pearls.
  • Fresh fruit:
    • Mango (diced).
    • Strawberries (sliced).
    • Kiwi (diced).
    • Apple or pear (optional, diced).
  • Sweetener / Liquid:
    • Sugar (according to your taste).
    • Coconut milk or sweetened condensed milk (for the creamy side).
    • Fruit juice or syrup (optional, for more flavor).

Instructions

  1. Boil the water: Bring a large pot of water to a boil. It is important that the water is already boiling before adding the pearls to prevent them from sticking or dissolving.
  2. Cook the tapioca: Add the colored tapioca pearls to the boiling water. Stir gently at first. Boil for about 15-20 minutes (or according to package directions) until translucent and soft.
  3. Let the pearls rest: Turn off the heat, cover the pan, and let the pearls sit in the hot water for another 10-15 minutes to ensure the center is cooked through and “springy.”
  4. Rinse and cool: Drain the pearls and rinse them immediately under cold running water. This stops cooking and removes excess starch.
  5. Prepare the fruit: Pendant que les perles refroidissent, lavez et coupez la mangue, les fraises et le kiwi en petits dés.
  6. Assemble the dessert: In a large salad bowl or individual glasses, combine the cooled tapioca pearls and fresh fruit.
  7. Sweeten: Add the sugar, coconut milk or syrup. Stir gently so as not to crush the fruit.
  8. Serve: This dessert is best served chilled. You can place it in the refrigerator for an hour before serving for a more refreshing experience
