Ingredients
For the dough:
- 350g flour
- 150ml of milk (lukewarm)
- 40g butter
- 1 tablespoon dry baker's yeast
- 1 tablespoon of sugar
- A pinch of salt
- 1 egg (optional, for the dough or for gilding)
For the stuffing:
- Minced meat (or protein of your choice)
- Chopped onions and peppers
- Nokoss (traditional seasoning paste)
- Grated cheese (mozzarella or similar)
- Spices: Pepper, salt and broth powder
Instructions
1. Prepare the dough
- In a bowl, mix the lukewarm milk, the sugar and the dry yeast.
- Add the flour, the butter and the salt.
- Knead the mixture (by hand or in a robot) until you obtain a smooth, homogeneous and elastic dough.
- Cover the dough and let it rest in a warm place until it doubles in volume.
2. Prepare the stuffing
- Saute the meat with the Nokoss, onions and peppers until completely cooked.
- Season to taste. Make sure the stuffing is very dry (not too much sauce) so as not to make the dough soggy. Let cool completely.
3. Shape the buns
- Once the dough has risen, punch it down and divide it into small balls of equal size.
- Flatten each ball to form a small circle.
- Place a spoonful of cooled stuffing and a little of grated cheese in the center.
- Pinch the edges of the dough to seal the filling inside and roll it again to form a smooth ball.
4. Cooking
- Arrange the buns on a baking tray covered with parchment paper.
- Brush the top with egg wash (beaten egg) for a golden finish.
- Bake in a preheated oven until golden brown and soft.
5. Service
- After cooking, you can brush them with a little melted butter for added shine and softness.
Enjoy your meal with your homemade savory buns!
