  • Fresh parsley, chopped
  • Fresh tomatoes, diced
  • Lemon juice
  • Spices: Salt, pepper and Sumac
  • Olive oil
  • Fries
  • Shawarma or Kebab bread
  • Sauce (the creator specifies that she will share this recipe separately)

Instructions

1. Prepare the meat

  1. In a food processor, blend the onions, garlic, green pepper and all the spices until you obtain a paste.
  2. Add the ground meat, fat and olive oil to this spice paste. Mix well until the mixture is homogeneous.
  3. Place a portion of the mixture on a sheet of parchment paper. Use a rolling pin to flatten it into a thin, even rectangle.
  4. Gently roll the flattened meat to form a tight sausage.
  5. Place the meat rolls in a steamer over boiling water. Steam for approximately 25 to 30 minutes.

2. Prepare the salad

  1. In a bowl, mix the red onions, fresh parsley and tomatoes.
  2. Season with salt, pepper, sumac, olive oil and a squeeze of fresh lemon juice. Mix well and set aside.

3. Assemble the Kebab

  1. Once the meat is cooked, remove it from the parchment paper. It should be firm but tender.
  2. Cut the meat sausage into thin strips.
  3. Take your kebab bun and spread the sauce inside.
  4. Add the strips of meat, the fresh salad mixture and the fries.
  5. Fold the bread tightly and wrap it in foil to maintain its shape.
  6. Cut the kebab in half and serve hot!
