Instructions
1. Prepare the meat
- In a food processor, blend the onions, garlic, green pepper and all the spices until you obtain a paste.
- Add the ground meat, fat and olive oil to this spice paste. Mix well until the mixture is homogeneous.
- Place a portion of the mixture on a sheet of parchment paper. Use a rolling pin to flatten it into a thin, even rectangle.
- Gently roll the flattened meat to form a tight sausage.
- Place the meat rolls in a steamer over boiling water. Steam for approximately 25 to 30 minutes.
2. Prepare the salad
- In a bowl, mix the red onions, fresh parsley and tomatoes.
- Season with salt, pepper, sumac, olive oil and a squeeze of fresh lemon juice. Mix well and set aside.
3. Assemble the Kebab
- Once the meat is cooked, remove it from the parchment paper. It should be firm but tender.
- Cut the meat sausage into thin strips.
- Take your kebab bun and spread the sauce inside.
- Add the strips of meat, the fresh salad mixture and the fries.
- Fold the bread tightly and wrap it in foil to maintain its shape.
- Cut the kebab in half and serve hot!
