Ingredients
- Souchet (Ndiir): Dried nutsedge seeds.
- Fresh ginger: Peeled and cut into pieces.
- Sweetener: Sugar (or Stevia for a healthier alternative).
- Aromas:
- Vanilla sugar or liquid vanilla.
- Orange blossom water (optional, for fragrance).
- Water: For soaking and mixing.
Preparation Steps
1. Soaking tiger nut
Dried nutsedge is very hard. You need to soak it in water for two days (48 hours) to soften it completely before mixing it.
Note: Be sure to change the water periodically during this time.
2. Preparing the ginger
Clean, peel and cut the fresh ginger into small pieces for easier mixing.
3. Mixing
Place the softened tiger nut and ginger pieces in a blender. Add water and blend until smooth and milky.
4. Filtering
Use a fine strainer (sieve) or a clean plant-based milk bag to filter the mixture. Squeeze or wring vigorously to extract all the juice, leaving only the dry fiber.
5. Sweetening and flavoring
Add your sugar or Stevia to the filtered juice. Add the vanilla and any other optional flavoring such as orange blossom water. Stir well until the sweetener is completely dissolved.
6. Cooling and service
Pour the juice into a carafe or bottles. Place it in the refrigerator to cool completely or serve it with ice cubes for optimal tasting
