Kawsaraby: Senegalese refreshing drink

Ingredients

  • Tapioca pearls: Small pearls (rinsed).
  • Dairy Product Base:
    • Whole milk
    • Unsweetened condensed milk (Bonnet Rouge or Peak type)
    • Sweetened condensed milk (to your taste)
  • Sweetener: Powdered sugar (adjust to your preference).
  • Fruits:
    • Strawberries (a few blended and strained for color/flavor, the rest freshly cut).
    • Mango (diced).
    • Green grapes (whole or cut in half).
  • Gelatins/Extras: Mango and coconut jelly (cut into cubes).
  • Ice cream: Ice cubes for serving.

Preparation Steps

  1. Prepare the Tapioca: Start by rinsing your tapioca pearls. Cook them until translucent and tender, then drain them.
  2. Create the Creamy Base: In a large bowl, mix the cooked tapioca with the whole milk, unsweetened condensed milk and sweetened condensed milk. Mix well.
  3. Sweeten and Flavor: Add the powdered sugar according to your taste. Pour in the mixed (and filtered) strawberry juice; this gives the mixture a nice pinkish hue and a base fruity flavor.
  4. Add the Fruits and Jelly: Gently incorporate the fresh cut strawberries, diced mango and green grapes. Add the mango and coconut jelly cubes for more texture.
  5. Serve: Mix everything carefully so that the fruits are well distributed. Add ice cubes to cool instantly, or place in the refrigerator for a few hours before serving.
