Instructions
1. Preparing and frying potatoes
- Precooking (Optional): Boil the potato sticks briefly in salted water for 3-4 minutes until slightly tender but not cooked through. Drain and dry them completely.
- Coating: In a bowl, mix the potatoes with the cornstarch, salt and chili powder. Make sure each piece is well coated.
- Double frying: *Fry the potatoes in hot oil until lightly browned.
- Remove them, let them rest for a minute, then fry them for a while second time over high heat until golden brown and very crispy. It’s the secret to perfect crispiness.
2. Preparation of the sauce
- Heat the oil in a wok. Add the chopped garlic, green chilies and the whites of the spring onions. Sauté for 30 seconds.
- Add the pepper and sauté over high heat for a minute (they should remain crunchy).
- Add the soy sauce, chili sauce and vinegar.
- Optional: For a thicker frosting, add a little diluted cornstarch (1 teaspoon starch mixed with 2 tablespoons water) and stir until thickened.
3. Assembly
- Reduce the heat to low (or turn it off) and add the fried potatoes to the sauce.
- Adding honey: Drizzle the honey over the potatoes. Mixing over too high a heat could cause the potatoes to soften.
- Mix everything quickly until the potatoes are well glazed.
4. Finishing Touches
- Sprinkle with roasted sesame seeds and chopped onion greens. Serve immediately while it’s hot and crispy!
