French toast (Mànàm bourou fass)

Ingredients

  • Egg yolks: 2
  • Whole egg: 1
  • Sugar: 3 tablespoons
  • Milk: 200ml
  • Fresh cream: 100ml
  • Orange blossom water: 2 caps
  • Vanilla extract: A net
  • Thick slices of bread: Brioche type or unsliced sandwich bread
  • Butter: For cooking
  • Vanilla sugar: For sprinkling and caramelizing
  • Toppings: Chocolate ice cream, whipped cream, caramel sauce and red fruit coulis.

Instructions

  1. Prepare the mixture: In a bowl, combine the egg yolks, whole egg and sugar. Beat with a whisk until the mixture turns white.
  2. Add the liquids: Pour in the milk and crème fraîche. Mix again with a whisk.
  3. Flavor: Add the orange blossom water and vanilla extract. Mix well.
  4. Soak the bread: Dip the thick slices of bread into the mixture, letting them soak on both sides until they have completely absorbed the liquid.
  5. Cooking: Melt butter in a large skillet over medium heat. Place the soaked bread in the pan and cook until nicely browned on both sides.
  6. Caramelize: Sprinkle vanilla sugar over the bread while it's still in the pan, then turn it over to let it caramelize slightly over low heat.
  7. Serve: Once nicely browned and caramelized, arrange the French toast. Serve hot, garnished with chocolate ice cream, whipped cream and a drizzle of caramel sauce and red fruit coulis.
