Ingredients
- Potatoes: 4 to 5 large potatoes (peeled and cut into fries).
- Chicken: 2 chicken breasts (cut into small cubes).
- Seasoning for chicken: Salt, pepper, garlic powder and a little mustard or Nokoss.
- Cheese: Cheese curds (traditional) or grated Mozzarella/Emmental if you can't find any.
- Brown Sauce (Gravy):
- 2 tablespoons of butter.
- 2 tablespoons of flour.
- 500 ml of beef or chicken broth.
- A drizzle of soy sauce (for color and depth of taste).
- Oil: For frying potatoes.
Instructions
1. Fries
- Peel and cut the potatoes into sticks. Soak them in cold water for 30 minutes to remove excess starch (this makes them crispier).
- Dry them thoroughly and fry them until golden brown. Drain them on absorbent paper and salt them while they are still hot.
2. Sauté the chicken
- Season the chicken cubes with salt, pepper, garlic and mustard.
- In a pan with a little oil, sauté the chicken over medium-high heat until cooked through and lightly browned around the edges. Reserve.
3. Prepare the brown sauce
- In a small saucepan, melt the butter. Whisk in the flour and cook for 1 to 2 minutes to create a “roux” (the mixture should be golden brown).
- Gradually pour in the broth while whisking constantly to avoid lumps.
- Add the soy sauce and simmer until the sauce thickens (it should coat the back of a spoon).
4. Assembly
- Place a generous portion of hot fries in a bowl or plate.
- Garnish with the sautéed chicken cubes.
- Sprinkle the cheese (curds or grated) over the chicken and fries.
- The final step: Pour it hot brown sauce on everything. The heat from the fries, chicken and sauce will melt the cheese to perfection.
5. Service
- Serve immediately while the cheese is melted and the fries are still crispy!
