Coconut Orange Donuts
Ingredients
- The Base:
- 500 g of fluid wheat flour (type T45 or T55)
- 100 g of sugar (adjust according to your taste)
- 1 sachet of baker's yeast (or 1 tablespoon)
- A pinch of salt
- The Trio of Flavors:
- 100 g grated coconut (unsweetened)
- The zest of a fresh orange
- 1/2 cup fresh orange juice
- For the Soft:
- 2 eggs
- 50 g melted butter
- Warm milk (add gradually until you get the right consistency)
- For Frying: Vegetable oil
Instructions
1. Mix the dry ingredients
In a large bowl, mix the flour, sugar, grated coconut, orange zest, yeast and salt. Mix well so that the coconut and zest are evenly distributed.
2. Add liquids
Make a well in the center and add the eggs, melted butter and orange juice. Start mixing by hand or with a spatula.
3. Knead the dough
Gradually add the lukewarm milk while kneading. You should obtain a soft, smooth and slightly elastic dough, but non-sticky. Knead for about 5 to 10 minutes.
- Note: If the dough is too sticky, add a little flour; if it is too dry, add a little more milk.
4. Leave to rise
Cover the bowl with a clean cloth and leave to rest in a warm place away from drafts for 1 to 2 hours. The dough should double in volume.
5. Shape and fry
- Gently degas the dough.
- Roll it out and cut it into small squares or triangles, or just take small pieces to make balls.
- Heat the oil in a deep saucepan (medium-high heat).
- Fry the donuts in small batches until they are nicely browned on all sides.
6. Service
Drain them on absorbent paper. You can serve them plain (as they are already very fragrant) or sprinkle them with a little icing sugar while they are still hot.
