The agricultural and cereal heritage of Senegal is in the spotlight in this episode of “Feemu Stars” with the artist Chacha! Together, they celebrate the authentic taste of the land through the making of traditional millet fritters (*Dougoup*).
Chacha: pride in Wolof roots and culture
The artist Chacha brings his grace and his deep attachment to Senegalese traditions. At Sala's microphone, she talks about her love for ancestral customs, Wolof proverbs and the vital need to promote local cereals over imported products.
She recounts the snacks of her childhood punctuated by the comforting smell of dougoup fritters prepared by grandmothers during the cool winter evenings.
Mastering millet flour for perfect fritters
Millet flour being naturally gluten-free, Sala shows the perfect balance to respect with a little wheat flour to provide the necessary elasticity. With Chacha, they knead the dough, add baker's yeast, sugar and a touch of nutmeg before leaving it to ferment.
The donuts are then removed and poached in hot oil. Their beautiful characteristic dark color and their airy and tasty crumb are unanimously appreciated during tasting.
