Ingredients
- The Base:
- Corn Arraw: Pre-prepared corn flour pellets (available in African grocery stores).
- Water: To boil the pellets.
- The Creamy Blend:
- Milk: Liquid whole milk or diluted powdered milk.
- Unsweetened Condensed Milk: (Gloria or Peak type) for more creaminess.
- Sugar: According to your taste.
- Flavor & Texture:
- Fresh Cream or Yogurt: To bring a slight tangy note and thickness.
- Vanilla Sugar: For the aroma.
- Nutmeg: A pinch of freshly grated nutmeg.
- Butter: A knob of butter for the silky side.
- Salt: A tiny pinch to enhance the sweet taste.
Preparation Steps
- Cook the Arraw: Bring a pot of water to the boil with a pinch of salt. Add the corn pellets and cook over medium heat until they are tender and the water is almost completely absorbed (the mixture should thicken).
- Sweeten and Flavor: Once the pellets are soft, reduce the heat. Add the sugar, vanilla sugar and nutmeg. Mix well.
- Make Creamy: Pour in the liquid milk and the unsweetened condensed milk. Stir continuously to prevent the bottom from burning.
- The Secret Touch: Add the butter and crème fraîche (or yogurt). This is what gives the founded its distinctive rich and slightly tangy flavor.
- Simmer: Simmer over very low heat for about 5 minutes until the consistency is thick but still smooth.
- Service: Serve hot in bowls. Some like to add a few drops of condensed milk on top just before enjoying
