Ingredients
- Coconut: 3 whole coconuts.
- Sugar: ½ cup.
- Water: ½ cup.
- Mint Syrup: 1 cup (the bright green variety).
Instructions
1. Prepare the coconut
Start by cracking the coconuts. Remove the brown skin and cut the white flesh of the coconut into thin strips.
2. Mix the ingredients
In a large pot or frying pan, combine the coconut strips, half a cup of sugar, half a cup of water and a cup of mint syrup. Stir everything so that the coconut is evenly coated in the green syrup.
3. Cooking
Place the pot over medium heat. You should cook this mixture, stirring occasionally at first, then more frequently as the liquid reduces.
- The goal is to let all the water and syrup evaporate.
- As the liquid disappears, the sugar and syrup will begin to caramelize and coat the coconut strips, transforming them into a sticky, fragrant, bright green treat.
4. Finishing and cooling
When there is no liquid left in the pan and the coconut looks shiny and slightly crystallized, remove from the heat. Spread the “Coco Mint” on a clean tray or surface to cool and harden slightly before serving.
