🥯 Homemade Burger Buns

Ingredients

  • The Dough:
    • 500 g of fluid wheat flour (type T45 or T55).
    • 1 sachet (approximately 7 g) of dry baker's yeast.
    • 1 tablespoon of sugar (to help yeast and coloring).
    • 1 teaspoon of salt.
    • 1 egg (at room temperature).
    • 250 ml lukewarm milk (not hot, otherwise it will kill the yeast).
    • 60 g of soft butter.
  • The Garnish:
    • 1 egg yolk (mixed with a drizzle of milk for gilding).
    • Sesame seeds.

Instructions

1. Activate the yeast In a small bowl, mix the warm milk, sugar and dry yeast. Let sit for about 5 to 10 minutes until the mixture becomes foamy.

2. Mix the dough In a large mixing bowl, combine the flour and salt. Make a well in the center and add the egg and the yeast mixture. Mix by hand or in a stand mixer until a coarse dough forms.

3. Add the butter and knead Add the softened butter to the dough. Knead for about 10 minutes (by hand) or 5 to 7 minutes (with a mixer) until the dough is smooth, elastic and no longer sticky.

Note: The dough should be very soft.

4. First lifting Place the dough in a lightly oiled bowl, cover it with a clean cloth and let it rise in a warm place for about 1 hour to 1 hour 30, or until it has doubled in volume.

5. Shape the loaves Degas the dough by pressing on it to release the air. Divide it into equal portions (about 8 to 10 pieces). Form each piece into a smooth ball and place them on a baking sheet lined with parchment paper. Flatten them slightly with the palm of your hand.

6. Second lifting Cover the loaves and let them rise again for about 30 to 45 minutes. They should have a swollen appearance.

7. Cooking Preheat your oven to 180°C. Badigeonnez délicatement le dessus des pains avec la dorure à l’œuf et saupoudrez de graines de sésame. Bake for 15 to 20 minutes until the top is nicely browned.

8. Cooling Let them cool on a rack. Covering them with a cloth while they cool helps keep them extra soft.
