Pain de Mie Pané (Stuffed Bread Fritters)
Ingredients
- The Bread:
- 1 package of square sandwich bread.
- The Stuffing (may vary, but typically):
- Canned tuna (drained) or cooked ground meat.
- Mayonnaise.
- Finely chopped onions and peppers.
- Hard-boiled eggs (chopped).
- Sweet corn (optional).
- Salt and black pepper.
- Breading (Coating):
- 2-3 eggs (beaten with a pinch of salt).
- Breadcrumbs.
- For frying:
- Vegetable oil.
Instructions
1. Prepare the stuffing In a bowl, mix your protein (tuna or meat) with the mayonnaise, chopped vegetables and hard-boiled eggs. Season with salt and pepper. The mixture should be creamy enough to hold together, but not runny.
2. Prepare the bread Take two slices of sandwich bread and remove the crust (optional, but it makes welding easier). Place a generous spoonful of stuffing in the center of a slice. Cover with the second slice.
3. Seal the pockets Use a round glass or large circular cookie cutter to press firmly into the center of the sandwich. This will cut the bread into a circle and seal the edges simultaneously.
4. The breading process
- Dip each pocket of bread in the beaten eggs, making sure the edges are well coated so they stay sealed.
- Then coat them with breadcrumbs until they are completely covered.
5. Fry until golden brown Heat the oil in a frying pan over medium heat. Fry the pockets for approximately 2 to 3 minutes per side, until they are deep golden brown and crispy.
6. Drain and serve Place them on absorbent paper to remove excess oil. Serve hot.
