Ingredients

For Wass Madd:

  • Pulp of 3 beautiful madd fruits (Saba senegalensis) with their seeds
  • 3 fresh hot red peppers
  • 1 teaspoon of coarse salt
  • 1 tablespoon of sugar (to balance the natural acidity)
  • 1 dash of water and a pinch of black pepper

Preparation

  1. Extract the madd: open the madd fruits and take the seeds coated with their tangy orange pulp into a bowl.
  2. Pound the aromatics: crush the fresh peppers with salt and pepper in a small mortar.
  3. Mix and season: add the chili puree to the madd pulp. Add the sugar and mix vigorously to release the fruity and tangy juice.
